  • ¼ cup all-purpose flour (30g)
  • 2 cups turkey or chicken stock (warmed, 16 fl oz, plus more if needed to loosen the gravy)

  • 2 cups leftover roasted turkey (shredded or cut into bite-sized pieces)

Instructions

  1. Preheat the oven to 400℉ (205℃).
  2. Thaw the puff pastry in the fridge. Lightly flour a surface and roll it out so it’s slightly thinner than its original state, maintaining a square or rectangular shape to fit your pan.
  3. Place a 10-inch cast iron skillet (or similar oven-safe baking dish) over medium heat. Add the olive oil and butter, allowing the butter to melt completely.
  4. Add the diced onion, minced garlic, fresh parsley, fresh thyme, and fresh rosemary to the skillet. Sauté gently, stirring occasionally, until the onions are softened and translucent and the herbs are fragrant (about 5-7 minutes). Add the peeled and diced potato and cook for about three minutes, stirring gently.
  5. Stir in the thawed frozen mixed vegetables, 1 teaspoon of kosher salt, and ½ teaspoon of cracked black pepper. Cook for about two minutes, allowing the vegetables to heat through and meld with the aromatics.
  6. Pour in the 2 teaspoons of Worcestershire or soy sauce, then sprinkle ¼ cup of all-purpose flour over the mixture. Toss well to coat all the vegetables and turkey evenly. Cook for 1 minute, stirring constantly, to lightly toast the flour and cook out its raw taste.
  7. While continuously stirring, slowly drizzle in the 2 cups of warmed turkey or chicken stock. Keep stirring as the liquid comes to a simmer and thickens into a rich gravy. Allow the gravy to bubble gently for a few minutes, stirring occasionally to prevent sticking and ensure a smooth consistency.
  8. Stir in the ¼ cup of heavy whipping cream until fully combined. Bring the mixture back to a gentle simmer for about a minute.
  9. Fold in the 2 cups of shredded or bite-sized leftover roasted turkey pieces. Mix gently to combine. If the filling needs to thicken further, let it simmer for another minute or two. Otherwise, remove the skillet from the heat and allow the filling to cool for about 15-20 minutes. This is a crucial step to prevent a soggy pastry crust.
  10. Carefully place the rolled-out puff pastry sheet on top of the cooled filling, allowing the edges to overhang slightly for a rustic look.
  11. In a small bowl, whisk 1 egg to create an egg wash. Brush the egg wash generously over the entire surface of the puff pastry, ensuring an even coat for a golden finish.
  12. Using a sharp knife, make two large slits (approximately 2 inches long) in the center of the puff pastry. These vents will allow steam to escape during baking, preventing the pastry from becoming too wet or dense.
  13. Bake the turkey pot pie in the preheated 400℉ (205℃) oven on the center rack for 20-30 minutes, or until the puff pastry is beautifully golden brown, puffed up, and flaky all over, with the filling bubbling up around the edges. If the pastry in the center appears undercooked, continue baking for a few more minutes at a time. If the pastry starts browning too quickly, loosely tent it with aluminum foil to prevent over-browning.

Notes

Allow the pot pie to cool for about 10-15 minutes prior to slicing and serving. This resting period helps the filling set and prevents it from being too runny. For best results when cutting through the flaky top layer, use a serrated knife. Afterward, switch to a large serving spoon or spatula to scoop out individual portions.

Store any leftover turkey pot pie covered with foil or plastic wrap in the fridge for up to three days. For reheating, place it in a 400℉ (205℃) oven until the filling is hot and the pastry re-crisps. Reheating in the microwave is not recommended, as it will likely result in a soggy pastry.

Additional Tips:

  • Roll out the puff pastry sheet until it just fits over the pan, with a slight overhang.
  • For the flakiest edges, allow the excess dough to hang over the sides of the pan; do not trim it flush.
  • Always keep your puff pastry as cold as possible. Store it in the fridge and only take it out to roll right before you’re ready to use it.
  • To catch any potential spillage from the bubbling filling, place a baking sheet on the oven rack directly below your pot pie.
  • Don’t worry if some of the gravy bubbles onto the pastry; it’s part of the rustic charm!
  • Ensure your pot pie filling is rather thick before adding the pastry. This thickness is crucial for the puff pastry to bake up light and airy. If it’s too liquidy, simmer a bit longer. If it becomes bone dry, add a splash of stock.
  • Allow the turkey pot pie to cool for 20-30 minutes prior to cutting and serving for cleaner slices and a set filling.
